  • 600 g Figs (net weight, peeled, or unpeeled if untreated) (1.32 pounds)
  • 240 g Sugar (8.47 ounces)
  • 1 Lemon (juice and zest)

How to make homemade Fig Jam

  • To prepare fig jam, start by washing, drying, and cleaning the figs. If the figs are untreated, you can keep the skin, otherwise, you need to remove it. In the latter case, simply remove the top portion and cut the figs into smaller pieces.
  • Squeeze the juice of one lemon, strain it and set it aside. Then, peel the lemon zest, only the yellow part, and cut it into thin strips. Pour everything into a bowl, together with the figs and sugar.
  • Mix well, cover with plastic wrap and let it rest for at least 2 hours (it can rest up to a maximum of 12 hours). In the meantime, follow the guidelines provided by the Ministry of Health to sterilize the jam jars safely.
  • After the resting time, cook the jam. Remove the lemon zest and pour all the fruit into a pot and cook for 40 minutes over low heat. Stir often for the first few minutes to prevent the sugar from caramelizing immediately. Then, continue cooking.
  • After 40 minutes, check the density of the jam and decide whether to stop or continue for another 10 or 20 minutes. The fig jam with pieces will be ready when it has a thick consistency. For a smooth jam, you need to pass it through a vegetable mill.
  • When it is still boiling, pour the jam into the jars, leaving 1-2 cm of empty space, close with suitable lids and flip the jars, waiting for them to cool down. The fig jam is ready to be tasted the next day!

Conservation

Vacuum-sealed fig jam jars can be kept for up to 10-12 months in a dark and dry place. If opened, they must be consumed within a week. By adding a label to the jar, there will be no doubts about the expiration date.
