- To prepare Spaghetti allo Scoglio, you must necessarily start from cleaning the fresh fish. If you have bought already cleaned fresh fish, go directly to the next step.
How to clean clams, mussels, shrimps and squids
- Clean the clams like this: place the clams in a large bowl and cover with abundant water. Add coarse salt to the clams soaking to reproduce a sort of sea water. Let them soak for 2 hours, changing the water from time to time, until they are clean, meaning that all the clams will be purged.After the time has passed, remove any remaining sand inside the mollusks simply by energetically beating them (but not too violently), hitting them with the closure facing towards the cutting board.
- Next, we move on to cleaning the mussels: remove the impurities on the shell by passing a knife over the back. Then, firmly rip out the beard, which is the tuft that sticks out from the side of the opening, and finally, scrape the mussels with a brush to thoroughly clean the shell. - Next we move on to the already cleaned squid, we only incise the surface, helping us to enter with the blade into its interior until it is fully opened so we can cut it into strips.
- Now we wash the cherry tomatoes and cut them into slices. Meanwhile, we put a pot of salted water on the heat and bring it to a boil, it will be used for cooking the spaghetti.
- At this point, we let 1 tbsp of extra virgin olive oil simmer in a pan with a clove of garlic (if you want, this is the time to add chili in the pan).
