To prepare creamy salmon pasta, we will use ridged penne pasta. Start by pouring plenty of water into a pot, place the pot on the stove, and wait for it to boil before adding the pasta to cook until al dente. In the meantime, let's focus on the cream and salmon sauce.
Take a pan, add a drizzle of olive oil and the butter. Finely chop the shallot and add it to the pan, let it brown for a couple of minutes.
Meanwhile, slice the salmon into small pieces and add them to the pan. Deglaze with half a cup of white wine over high heat. Wait for all the alcohol to evaporate, and finally, add the cream. Stir with a wooden spoon, adjust the salt, and continue stirring to obtain a creamy mixture.
By now, the pasta should be cooked, it's better to remove it from heat a couple of minutes before it's fully cooked. Pour it into the pan with the cream and salmon sauce and toss for a few minutes.
