  • 200 g Granulated Sugar
  • 120 g Vegetable Oil
  • 100 g Lemon Juice
  • 2 zest of Lemons
  • 16 g Baking Powder

How to prepare the fluffy and tall Lemon Cake?

  • To prepare this delicious Lemon Cake, we start by squeezing the fruit using a citrus juicer. We need to obtain 100g of juice. Let's also obtain the zest from 2 lemons. Set aside.
  • In a bowl, put the sugar and eggs, and start working them with an electric mixer for a few minutes. When the mixture becomes frothy, we can add the oil gradually, the zest, and lemon juice, and continue working everything with the electric mixer.
  • After a few minutes, when the ingredients are well blended, we can sift the flour into another bowl. Preheat the oven to 338°F.
  • Turn the beaters back on at low speed in the liquid mixture and add one tablespoon of flour at a time so that no lumps form. Lastly, sift and pour the baking powder into our mixture. Mix well and turn off the beaters.
  • Take a cake pan of 22 cm in diameter (8.7 inches) and grease it before pouring the mixture (if your pan is larger, the cake will be slightly lower). Smooth the mixture with a spatula so that it will rise uniformly during baking in the oven.
  • By the way, it's time to bake: let it cook at 338°F for 50 minutes. Perform the toothpick test before definitively removing it from the oven! Let the fluffy and tall Lemon Cake cool completely before dusting the surface with powdered sugar, slicing, and serving.

Tips

You can fill this cake with delicious lemon cream and decorate it with puffs of whipped cream and caramelized zest for a wow result suitable even for a birthday party! Alternatively, you can enrich the mixture with almonds previously toasted and then chopped, to give a more intense and rustic touch. Instead of the zest of two lemons, you can try adding a little grated ginger.
